The Presa is a cut of meat obtained from the top part of the loin and has an oval shape. Very infiltrated in fat, with fine muscle fibres that make it very tender and pleasant to the palate. Its colour is intense red. It can be cooked in many ways, pan seared, griddle, oven, in sauce, etc.
